Here’s a simple recipe to make Gobi Manchurian at home:

Ingredients:

1. For the Gobi (Cauliflower) Fritters:

2. 1 medium-sized cauliflower (cut into bite-sized florets)

3. 1/4 cup cornflour (cornstarch)

4. 1/4 cup all-purpose flour (maida)

5. 1-2 teaspoons ginger-garlic paste

6. 1 teaspoon red chili powder (adjust to spice preference)

7. 1/4 teaspoon turmeric powder

8. Salt to taste

9. Water (for batter consistency)

10. Oil (for deep frying)

For the Manchurian Sauce:

1. 2 tablespoons oil

2. 1 onion (finely chopped)

3. 1 bell pepper (finely chopped, optional)

4. 1-2 green chilies (sliced, optional)

5. 1 tablespoon ginger-garlic paste

6. 2 tablespoons soy sauce

7. 1 tablespoon red chili sauce

8. 1 tablespoon tomato ketchup

9. 1 teaspoon vinegar

10. 1/4 teaspoon sugar (optional)

11. 1/2 teaspoon cornflour (mixed in 1 tablespoon water)

12. Salt to taste

13. 1/4 teaspoon black pepper

14. Chopped spring onions (for garnish)

Instructions:

1. Prepare the Gobi:

  • Boil water in a large pot and blanch the cauliflower florets for 3-4 minutes, then drain and set aside to cool.
  • In a mixing bowl, combine cornflour, flour, ginger-garlic paste, red chili powder, turmeric, and salt. Add water little by little to form a thick batter.
  • Dip the cauliflower florets into the batter and coat them evenly.
  • Heat oil in a pan for deep frying and fry the battered florets until golden brown. Drain excess oil on paper towels.

2. Prepare the Sauce:

  • In a pan or wok, heat 2 tablespoons of oil.
  • Add chopped onions, bell pepper, and green chilies, and sauté for 2-3 minutes until softened.
  • Add ginger-garlic paste and sauté for another minute.
  • Stir in soy sauce, chili sauce, ketchup, vinegar, and sugar. Cook for 2-3 minutes.
  • Add the cornflour-water mixture to thicken the sauce.
  • Adjust salt and pepper to taste. If you prefer a spicier sauce, you can add more chili sauce or fresh green chilies.

3. Combine:

  • Add the fried cauliflower florets to the sauce and toss them well to coat evenly.
  • Garnish with chopped spring onions and serve hot.
