Ingredients:

1. Chicken pieces (drumsticks, wings, thighs) – 1 kg

2. Buttermilk – 2 cups

3. All-purpose flour – 2 cups

4. Cornstarch – 1/2 cup

5. Eggs – 2

6. Milk – 1/4 cup

7. Salt – 1 tsp

8. Pepper – 1 tsp

9. Paprika – 1 tsp

10. Garlic powder – 1 tsp

11. Onion powder – 1 tsp

12. Dried oregano – 1 tsp

13. Dried thyme – 1 tsp

14. Cayenne pepper – 1/2 tsp (optional, for extra spice)

15. Oil – for deep frying

Instructions:

Step 1: Marinate the Chicken

  • In a large bowl, combine buttermilk, salt, and pepper.
  • Add the chicken pieces, ensuring they're fully submerged.
  • Cover and refrigerate for at least 4 hours or overnight for best results.


Step 2: Prepare the Coating

In a separate bowl, mix flour, cornstarch, paprika, garlic powder, onion powder, oregano, thyme, cayenne pepper, salt, and pepper.

In another bowl, beat the eggs and mix in the milk.

Step 3: Coat the Chicken

  • Remove the chicken from the buttermilk and let excess drip off.
  • Dip the chicken in the flour mixture, then into the egg wash, and again into the flour mixture for a double coating.
  • Place the coated chicken on a tray and let it sit for 10-15 minutes.


Step 4: Fry the Chicken

  • Heat oil in a deep pan or fryer to 175°C (350°F).
  • Fry the chicken pieces in batches, avoiding overcrowding, for 12-15 minutes or until golden brown and fully cooked (internal temperature: 75°C/165°F).
  • Drain on paper towels to remove excess oil.


Step 5: Serve

Serve hot with your favourite dips, coleslaw, and fries for the full KFC experience.
